Chanterelle Goulash
Cookbook | Recipes | Ingredients | Equipment | Techniques | Cookbook Disambiguation Pages | Recipes | Austrian Cuisine Goulash of Chanterelles is a typical Austrian main dish. It is served mainly during the summer, which is the mushroom season in Austria. Although it is possible to freeze mushrooms, the taste of frozen chanterelles cannot be compared to the taste of fresh ones. The goulash consists of chanterelles, onions, sour cream, various herbs, and spices. It is traditionally served with either dumplings or spaetzle. The most important spice is the paprika powder that adds a sweet flavor. The preparation process is not difficult and usually takes less than 25 minutes.
